Dr. Pemberton proceeded to improve upon Angelo Mariani’s formula and develop the taste profile that modern cola beverage share today. Kola nut extract, chosen for its caffeine content, was the first major ingredient he added to the wine and coca base.
Kola nut attributed bitter notes to the drink; to remedy the problem, Pemberton added citrus essential oils. Sugar was also added to the elixir for a sweeter profile, and citric acid to balance the sweetness. Finally, caramel color was used so the customer could not see product separate in the bottle. The dark caramel color covered up the lack of homogenization of the time.
Anticipating the future temperance movement in the United States, Dr. Pemberton crafted two versions of his formula: an alcoholic version and a non-alcoholic version. Upon completion, Pemberton marketed the new health tonics under Pemberton's French Wine Coca and Temperance Drink respectively.
Columbus, Georgia—the birthplace of Dr. John Stith Pemberton’s original formula. It would not be until the mid 1880s that his coca-based patent medicine, advertised as a strong brain tonic and cure-all for nervous affections, would receive its bubbles, distribution, and new name.
